This is the Mexico Maximino Gonzales brought to you by Augies Coffee Roasters. This fully washed coffee was sourced from the growing region of Oaxaquena in Mexico and was produced by Maximo Gonzales at 1,250 - 1,400 meters. This coffee is complex with a sweet caramel note complemented by an almost herbal like savory quality.
A lot going on in this one. On the nose I get a lot of earthy, herbal notes that bring to mind artichoke. The mouthfeel is medium to full-bodied and once again, very earthy and vegetal. Light bitterness and a long finish.
Roaster's recommended brew ratio is 1:14. Bringing it down to the usual 1:16 tones down the vegetal notes some.
